Scoop the citrus sorbet into a high ball glass. Pour the pomegranate juice over the sorbet. Pour half of the ginger beer, and then the sparkling apple juice. Float the last half of the ginger beer on top. Do not stir! It's best for the layers of fizzy flavors to come through with each sip. Have a spoon ready.
