2 cups water or chicken broth

1/2 tsp. kosher salt

2 Tbsp. extra virgin olive oil or butter (or one and one)

1 10-oz. box couscous

1/2 cup thinly sliced green onions

1 In a medium saucepan bring the water, salt, and olive oil or butter to a boil.

2 Stir in the couscous and cover the pan tightly.

3 Immediately remove the pan from the heat and let it stand for a full 5 minutes.

4 Add the green onions and fluff the couscous lightly with a fork before serving.
