Oysters Casino

2# Butter

1 1/2qt Bacon, diced

1 1/2 qt Shallots, diced

1 cup Garlic, chopped

1 qt Flour

2 qt Oyster Water

1 qt Parsley, chopped

2 cups Parmesan powder

1 lb Crabmeat, jumbo lump


In a large braiser, melt the butter then sweat the bacon.

Add the shallots and continue to cook 2-3 min.

Add the garlic, salt and ground red pepper and cook about 3 min.

Add the flour to form a roux ,cook 3-5 min.

Add the oyster water and stir constantly, cooking until the roux forms a pande and balls away from the side of the pan.

Add the parsley, cook for 1 min. then add the parmesan and crab meat.

Remove from the heat,spread on a sheet pan and let cool.
