Chef Kevin Belton joins the Eyewitness Morning News in Frank’s Kitchen with a unique southern treat that highlights a Louisiana favorite: Creole Tomato Pie

Creole Tomato Pie


  • Pinch of salt
  • 4 Creole tomatoes
  • 1 cup mayonnaise
  • 1 1/2 of cheddar cheese
  • 8 basil leaves chopped
  • 2 tablespoons of Big Kevin's seasoning


  • Slice tomatoes
  • Lay them on sheet pan
  • Sprinkle a little salt on the tomatoes and let them sit out for 15 minutes
  • Rinse off tomatoes and pat dry
  • Put them in the bottom of a large pie shell
  • Combine other ingredients and spread it on top of the tomatoes
  • Cook for 25 minutes on 325 degrees
