Diabetes-friendly recipe: Lemon butter

1 cup Lemon Juice

Zest of 2 Lemons

2 sticks unsalted butter-soft

Salt and Pepper to taste

 

In a small sauce pan, over medium heat, reduce the lemon juice by half and let cool.

In a food processor, pour zest, butter, salt and pepper. Pulse until well blended and roll into log.
