The Irish House's Guinness Chocolate Trifle

Serves 12

Guinness Chocolate Cake

1 cup of Guinnes stout

1 cup of butter room temp

3/4 cups cocoa

2 cups of AP flour

2 cups of sugar

1 1/2 tsp. of baking powder

1/2 tsp. salt

2 eggs

2/3 cups of sour cream


Mix the flour, sugar, soda and salt together.

Mix the eggs and sour cream.

Simmer the Guinness and butter together and when cooled down add to the egg mixture.

Fold both mixtures together and pour into a regular cake tin and bake at 350 degrees for 25 minutes.

Baileys Butter Cream

3 pounds of unsalted butter

8 oz. of chocolate

3 oz . of Baileys

1 oz. of Tullamore Dew


Cream the butter in a mixing bowl then add the remainder ingredients .

Whip till light and airy. that should take about 15 mins.

Trifle How To

Use a glass to serve. A suggestion is a 5 oz. straight sides glass.

Layer the Guinness cake first. Then take the Baileys butter cream and using a piping bay do a layer. Repeat this between the glasses leaving the final layer about a half inch from the top of the glass. You can whip some cream unsweetened and have this as the final layer, garnished with shaved chocolate.
