Step up to the window of a taco truck and you might spy small plastic barrels of agua limón (lemon) or agua piña (pineapple) on a shelf by the register. The translation of agua fresca is fresh water or cold water and these are, in essence, light, thirst-quenching blends of water and fruit. Served at El Ultimo Taco in stubby white foam cups, these drinks pack a morning punch and inspired this recipe.
6 cups cubed, peeled, and seeded watermelon or cantaloupe
6 cups cold water
3 tablespoons freshly squeezed lime juice
6 tablespoons granulated sugar
Ice, for serving
Place the watermelon, water, lime juice and sugar in a blender and puree until very smooth.
Pour the agua fresca through a strainer into a pitcher and chill it before serving it poured over ice.
