Mike’s on the Avenue

Mike’s Classic Louisiana Barbecue Oysters

Barbecue Sauce
3T    Tomato paste
2    Garlic cloves
1    Shallot
1T    Cilantro
½ t    Black Pepper, ground
½ c    Rice Wine Vinegar, Seasoned
¼ c     Brown Sugar
¼ c    White Sugar
¼ c    Soy Sauce
1t    Tabasco
2T    Sesame Oil
¼ c    Olive Oil

Add all ingredients, EXCEPT OILS to blender and mix well. Slowly add oils
while blender is running to emulsify. (Makes about 2 ½ cups.)

Crispy Pancetta
4     Pancetta, sliced 1/16” thick
Pre-heat oven to 350 degrees. Place pancetta (bacon may be substituted)
on parchment paper lined sheet pan. Place another piece of parchment on
top and place another sheet pan on top to press while cooking. Cook for
10 minutes or until done. Do not overcook. After cooling cut pancetta
into 6 pieces per slice. (24 pieces)

Assembly:
Shuck 12 oysters. Place one piece of pancetta and 1t of barbecue sauce on
top of each oyster. Cook in oven, broiler or open grill until barbecue sauce
bubbles. Serve on rock salt with a lemon wedge.
Makes 4 servings of 6 oysters each.
