Recipe: Mussels au bleu

Moules au bleu

2 lb Mussells
6oz white wine
4 oz heavy cream
1 small onions chopped
1 bunch of parsley chopped
1/4 lb roquefort or gorgonzola crumbles
4oz of butter
salt and pepper if needed
Preparation :

In a big pot, sauted the onions in a little bit of butter untel golden brown, add the moules and the white wine.
when the mussels are almost open, put the heavy cream and blue cheese and let it cook until it gets thicker. the thicker the better!!
add the parsley and cook 2 minutes before serving.
