Chef Russo's Crawfish mac and cheese.
1 pound of Pasta (any pasta)
8 ounces of Boursin Garlic Cheese (soft spreadable cheese)
8 ounces of Cream Cheese
8 ounces of American Cheese
1 quart of Heavy Cream
1/2 pound of Crawfish (cooked)
Heat and whisk the heavy cream with the Boursin, cream and American cheese until smooth. You can add other cheeses to match your flavor profile and preference. Add the cooked pasta to the cheese along with the cooked crawfish and place it in a casserole dish. Top with seasoned breadcrumbs. Cook at 350 degrees for twenty minutes.
