½ stick of butter
1 large yellow onion (small diced)
1 large tomato (small diced)
½ lb of medium sized shrimp (peeled)
½ lb of bay (small) scallops
¼ cup freshly squeezed lemon juice
1 cup of white wine (Macon Village brand is suggested)
¼ cup of fresh chopped cilantro
1 tsp of sea salt
1 tsp of black pepper
Just a pinch of cayenne pepper
1lb your choice of pasta (thin spaghetti is suggested)
In a large skillet, add butter and let melt.
Add onions and cook until soft and translucent, about 2 minutes.
Add tomatoes and cook for another 2 minutes.
Next add shrimp and cook until just pink, about 3 minutes.
After add the lemon juice and wine and cook until the juice comes to a boil.
Tthen add scallops.
Add seasonings and cilantro, and cook until the wine has reduced into a sauce that can coat the back of a spoon. The scallops should be cooked, but tender and white.
Cook pasta as directed on the back of your favorite pasta choice
