NEW ORLEANS - As a Louisiana native, Nita Duhe' grew up eating the rich, spicy Cajun and Creole dishes people travel from all over the world to eat.

It wasn't until she moved away to college that she started experimenting with healthy alternatives to the fats used in local recipes.

Now, as owner of the Crescent City Cooking School, Duhe' can show you how to make healthy versions of your favorite dishes.

She was in the studio Wednesday morning to share a few of her recipes.

To learn about the Crescent City Cooking School and Store, you can visit them in the Riverwalk, call them at 529-1600 or log on to crescentcitycooks.com.
