6-2/3 cups whole milk
3/4 cup unsalted butter
1-2/3 cup uncooked grits
1-3/4 teaspoons sea salt
3/4 teaspoon white pepper
1-2/3 cups shredded Cheddar cheese
1/2 cup unsalted butter
3/4 cup grated Parmesan cheese
Preheat oven to 350 degrees and lightly butter a medium size baking pan.
Next, in a pot large enough to contain the finished grits, bring the milk to a boil over medium heat. Then melt and stir in 1/2 cup of butter in the boiling milk.
Now gradually whisk in the grits and cook them for 5 minutes, continuing to stir all the while. Then take the pot of grits off the fire and season it with salt and pepper. At this point, take an electric beater and process the contents of the pot until everything is smooth.
Finally, slowly stir in the Cheddar cheese plus the remaining 1/3 cup of butter. Then transfer the cheesy grits to the buttered baking pan and cover them with the Parmesan cheese.
All that’s left is to put the baking pan into the oven—uncovered—and bake the grits until they become firm.
