Ya' know what, y'all? I have never had a Franksgiving yet without a big pan of both cornbread dressing and oyster dressing. . .and this year will be no different. I'll pick up a freshly-shucked quart of oysters Tuesday morning (along with a full quart of oyster water) so that I can whip up the dressing Thursday morning. So I say unto you. . .am I concerned about eating Louisiana oysters? Not at all. Oysters going on the open market right now from Louisiana are as safe as oysters anywhere! Just buy them from a reputable source and not from some guy on the side of the road who's favorite montra is. . ."Pssttt! Wanna buy some ersters?" Hope this alleviates some of your concerns.
