½ cup butter
3 eggs, well beaten
1 cup all purpose flour
1 cup whole milk
1 tsp. baking powder
1 lb. grated Mozzarella cheese
2 pkgs. frozen chopped spinach
1 tsp. vegetable spice
2 cups shredded Parmesan cheese

First melt the butter in a 9x13x2 pan (I like those disposable aluminum pans for this recipe since you can toss them—and all the sticky cheese—out when the squares are all gone).
Now mix together all of the above ingredients—except the shredded Parmesan—and pour the mixture into the buttered pan.
With a rubber spatula or a large chef’s spoon, pat the mixture down level and bake it at 350 degrees for about 35-40 minutes.
Finally, when you remove the pan from the oven, lightly sprinkle on the Parmesan and allow the residual heat to melt the cheese.
All that’s left is to cool the pan and cut the spinach into squares.
These squares can be frozen to be served at a later date.
Best way to do that is… once they’re sliced, place them on a cookie sheet and quick freeze them; then place them in single layers in plastic zipper bags and return them to the freezer.
To reheat for service, place them once again on a cookie sheet and bake them 12-15 minutes at 325 degree until bubbly-hot..
