Tuesday morning on the air, in response to numerous "how-to" requests, I showed my viewers how to fix tilapia (well, I showed them one way to do it). And I did take time to mention every other preparation method you could use to fix the fish for the table. The video is on this website--as is the recipe. Give it a glance or two.
Even if you've tried tilapia before and didn't care for it, I suggest you cook it this way and try it one more time. You'll be surprised what three different kinds of breadcrumbs and an equal amount of imported grated Parmesan can do for fish when sauteed in extra virgin olive oil.
Email me back at either firstname.lastname@example.org or email@example.com and let me know what you think. Oh, yeah. . .just for the record tilapia can be fixed beautifully any way you want it! In other words, you can pan saute it as we do here, or deep fry, panfry, bake, roast, grill, smoke, barbecue, stew, and courtbouillon it! The trick is. . .just make sure you got fresh tilapia. --Chef Frank
