Cole Slaw

I bag of coleslaw mix from supermarket produce section
1 cup pre-chopped onion, celery, bell pepper, parsley and green onions
1 large bottle coleslaw dressing (your favorite brand)
1/2 cup real mayonnaise
4 tablespoons granulated sugar or light corn syrup
1 small can crushed pineapple with juice
Sea salt and fresh-ground black pepper to taste

Empty contents of coleslaw bag plus the cup of mirapoix into a large mixing bowl and toss thoroughly to combine.

Then in a separate bowl whisk together all the remaining ingredients until you produce a dressing that is rich and creamy.  

At this point, transfer the dressing to the coleslaw mix, toss again until uniformed blended, and then return the prepared slaw to the refrigerator for at least 45 minutes to chill. 

Serve alongside your pulled pork sandwiches for a real Carnival post-parade treat!
