Since it was raining cats and dogs all morning long and I couldn't get out to work in my vegetable garden, I decided to clean out the refrigerator and the freezer. But. . .when a chef "cleans out" it usually means another dynamite recipe is about to be conceived. And it was!
I took the bag of pre-breaded okra, washed off most of the breading, defrosted the plastic container of mirapoix (onions, celery, bell pepper, shallots, parsley, and garlic), thawed out the 2-pound bag of King Crab Claws and cut them in chunks, defrosted the 3-pound bucket of 21-25 peeled shrimp I found in the back of the freezer, melted down a stick of butter, sauteed the veggies in a 5-quart stainless steel gumbo pot, dropped in a quart Ziploc of peeled 21-25 shrimp plus the kingcrab claws, poured in six cups of rich seafood stock, and seasoned the entire pot with just enough of my Seafood Seasoning to bring tears to a grown man's eyes! An hour's worth of "slow cooking" after all this went down, Mary Clare and I sat down at the kitchen table while the rain poured outside and. . .well y'all know the rest of the story! Ummmmm--now I could use a nap! zzzzzzzzzzzzzzzzzz!
