Spicy Cajun Corn Bundle

Ingredients:

1 sheet heavy duty aluminum foil (18x24 inches)
4 cans whole kernel corn, drained
1 small onion, diced
1 cup fresh tomatoes, peeled and diced
3/4 cup green bell pepper, diced
3/4 cup red bell pepper, diced
½ tsp. crushed red pepper flakes
2 tsp. Frank Davis Vegetable Seasoning
1 tsp. Frank Davis Sprinkling Spice
1 stick sweet cream butter.

First, preheat the oven to 450 degrees.

Then in a large mixing bowl, combine the corn, onions, tomatoes, and bell peppers.

Next, center the veggies on the sheet of aluminum foil and sprinkle on the pepper flakes, vegetable seasoning, and sprinkling spice. Gently toss to blend everything together.

At this point, top with the stick of butter, cut into pats.

Then bring up the foil sides and double fold the top and ends to seal the bundle, making one large foil packet. Just be sure to leave some headroom inside the fold to allow for heat circulation inside.

All that's left is to place the bundle into the oven on the center rack, either on a cookie sheet or in a shallow pan, and bake it for about 25 minutes or until bubbly hot.
