Plymouth Rock Veggies and Beets

Franksgiving Menu

• Foil-Baked, Double-Breasted Turkey with Pan Drippings

• Spicy Cajun Corn Bundle

• Veggies and Beets

• Garlic and Onion smashed potatoes

• Lentil Soup with Vermicelli

• Orange Coconut Tarts

Ingredients:

1 sheet heavy duty aluminum foil (18x24 inches)
1 small onion, thinly sliced
3 cups broccoli florets
2 medium carrots, thinly sliced on a bias
1 medium yellow squash or zucchini, sliced
2 cups small whole beets, drained and quartered
1 tsp. balsamic vinegar
1/4 cup capers, drained
1 tsp. sweet basil
1 tsp. garlic salt
2 tsp. Frank Davis Vegetable Seasoning
2 ice cubes
1/2 stick sweet cream butter, cut into pats

====

First, preheat the oven to 450 degrees.

Then evenly line the sheet of foil into a 10x14-baking pan and center the vegetable mixture atop the foil in the pan.

Next, drizzle on the vinegar and sprinkle on the capers, basil, garlic salt, and vegetable seasoning.

Then top the veggies with the ice cubes and the pats of butter and bring up the foil sides. At this point, double fold the top and ends to seal the package, creating one large foil pack (but be sure to leave enough headroom inside for heat circulation).

All that remains is to bake the package for about 25 minutes or until hot and bubbly.
