Now I know y'all like to watch me cook on the show and try and keep up with the recipe. But, writin' all that stuff can be kinda' hard. So, I'm gonna do y'all a favor: I'm gonna put my recipes here on the Net so you can get the skinny on all the great food featured on the show.

How To Make Stewed Rabbit Over Rice

Sorry this is coming to y'all late.  What can I say... computer problems. Let me just tell you this... This is the best rabbit recipe that I have encountered in a while!  Make it tonight and you too will be a believer!

Ingredients

1 cup Vegetable Oil
1and 1/2 cup diced onions
1 cup diced Bell Peppers
1 cup diced celery
1 an 1/2 cup sliced carrots
2 tbs. Chopped garlic
5 cups Chicken Stock or water
1 tbs. Salt and pepper to taste
3 bay leaves
1/2 cup All-Purpose flour

Instructions

Step 1:  Heat cup of oil.

Step 2:  Cut rabbit into five pieces.  Add slat and pepper (1 Tbs.) and flour to dust.

Step 3:  Place rabbit into hot cast iron Dutch oven and fry until golden brown.

Step 4:  Remove rabbit pieces from oil and drain.

Step 5:  Whisk 1/2 cup flour into oil and cook until brown

Step 6:  Drop in onions, bell peppers, celery, garlic and carrots.  Cook 5 minutes.

Step 7:  Add stock and bay leaves, bring to boil and well.

Step 8:  Place into preheated oven at 350 degrees.

For one (1) hour stir every 15 minutes.  Add salt and pepper to taste after 1/2 hour.  Then serve over rice and enjoy.

Chef's Notes
