1 cup lightly packed dark brown sugar
3/4 cup granular sugar
2 teaspoons ground cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon allspice
1 stick butter, melted
2 tablespoons pure vanilla
2 apples, unpeeled, cored, and medium sliced crosswise
2 slightly ripened bananas, peeling on, sliced lengthwise
Take your Camerons Stovetop Smoker and remove the innards.
Then place the pan over a single burner, set it on medium-high, and pour 2 tablespoons of wood chips right in the center.
At this point, set the drip pan on top of the chips and place the rack into the drip pan.
After seasoning the apple slices and banana halves with the sugar marinade, set the apple slices onto the rack; then place the banana halves onto the rack next to them. . .skin side down.
Slide the lid closed and allow the fruit to smoke for about 20 minutes or until the intensity is to your liking.
While most folks will tell you not to open the smoker until the food is done, I recommend that every 10 minutes or so you re-baste the fruit with the sugar mix.
When the fruit softens slightly and a beautiful golden crust forms, it's done and ready to serve.
BTW. . .any firm-type fruit can be smoked on your stovetop.
