2 pounds fresh okra pods, tipped and cut into 1/2 inch pieces
2 teaspoons kosher or sea salt, divided
1 quart iced water to cover
1-1/2 cups cultured buttermilk
4-6 dashes Frank Davis Garlic Hot Sauce or 1/2 teaspoon ground cayenne pepper
2 cups Frank Davis Chicken Fried Mix or seasoned self-rising cornmeal
2 cups vegetable or peanut oil
Start by putting the washed, sliced okra into a bowl.
Then generously sprinkle the pods with one teaspoon of salt, toss everything gently but thoroughly, and cover the salted pods with very cold water.
At this point, refrigerate the bowl for at least one hour.
Next, drain off the salt water completely.
Then toss the pods with the buttermilk, the hot sauce, and the remaining salt and stir everything together until well coated.
But don't cook yet! /Let the pod slices stand once again for at least 15 minutes.
Then, when you're ready to get after it. . .drain off the buttermilk mixture and put the chicken-fry mix or seasoned cornmeal in either a shallow dish or a Cajun Flip-N-Fry.
All that's left to do is toss the slices in the breading until they are well coated.
Then gently fry the okra at 375 degrees in a deep fryer in small, uncrowded batches until they become golden brown and crispy-crunchy (about 4 to 6 minutes for each batch).
Now it's just a matter of draining the pieces on either super-absorbent paper towels or a frying rack and serving them piping hot. By the way, this recipe should serve about 4 to 6 persons.
To give the fried okra a little extra 'kick,' after it's fried and while it's still hot feel free to re-season it when you serve it with a little Frank Davis Sprinkling Spice, a dash or two of Tony Chachere's, or your favorite Cajun flavoring.
If you can't find fresh okra, it's okay to use the frozen variety. But. . .
If all this sounds way too complicated and time-consuming to you (which it really isn't), then you have my blessing to buy a bag of frozen, pre-coated, ready-to-cook okra from the supermarket and just do the frying part.
While it would probably never get the nod from your MawMaw and make her deliriously happy, today's pre-breaded product is pretty doggone good stuff!
