ounces light cream cheese
8 ounces light sour cream
8 packets of Splenda
½ tsp vanilla extract
2 whole eggs
1 tbsp lemon juice
Blend all ingredients in blender on high speed for 5 minutes. Place into a double boiler. If you don't have a double boiler, place mixture into a baking dish, and then place that dish into another pan, separated by water.
Bake at 350 degrees for 50 minutes. Turn off oven and leave cheesecake in oven for one hour.
