Eye-Opening Breakfast Burritos

Ingredients:
2 whole wheat tortillas
cooking spray
1 red pepper, diced
1 green pepper, diced
½
onion, chopped
2 whole eggs and 4 egg whites, lightly beaten
½ tsp. salt
¼
tsp. cayenne pepper
¼
cup salsa
Directions:
Hold tortillas in oven at 250 degrees to warm; in canola
oil, sauté peppers and onion until tender; add egg
mixture, salt and cayenne pepper; cook until eggs reach
desired consistency (stir occasionally to keep eggs from
sticking); divide mixture onto tortillas; roll up tortillas,
top with salsa.
