Ingredients:
¾
cup no saturated/no trans fat spread (i.e. Brummel and
Brown)
¾ cup milled flaxseed
11/2 cups granulated fructose
2 eggs
1 tsp. Vanilla
1 cup whole wheat flour
1 tsp. Baking soda
1 tsp. Ground cinnamon
½ tsp. Salt (optional)
3 cups oats, uncooked
Directions:
1. Heat oven to 350 degrees F. In a large bowl, beat butter
style spread and fructose until creamy. Blend in flaxseed.
2. Add eggs and vanilla; beat well.
3. Add combined whole wheat flour, baking soda, cinnamon,
and salt; mix well.
4. Add oats; mix well.
5. Drop dough by rounded tablespoons onto ungreased cookie
sheets.
6. Bake 8-10 minutes for a chewy cookie or 10-12 minutes for
a crisp cookie. Cool 1 minute on cookie sheets; remove from
wire rack. Cool completely and store in a tightly covered
container.
