Greek Turkey Burgers

Ingredients:
1 (10 oz.) pkg frozen chopped spinach, thawed, drained, and squeezed dry1 tablespoon lemon juice
¼ teaspoon black pepper
1 large egg white, lightly beaten
¾ pound ground turkey breast
½ cup (2 ounces) crumbled feta cheese
¼ cup chopped fresh mint or 4 teaspoons dried mint flakes
Cooking spray
4 whole wheat hamburger buns
1 cup fresh spinach leaves
½ cup diced tomato
(Greek Yogurt Sauce below)
Combine
first 4 ingredients; add ground turkey, feta, and mint, and
stir well. Divide mixture into 4 equal portions, shaping each
into patties.
Grill patties ~6 minutes on each side or until done.
Line bottom half of each bun with spinach leaves; top each
with a patty, diced tomato, Greek yogurt sauce, and top half
of bun.
Yield: 4 servings.
Greek
Yogurt Sauce
1/2cup plain yogurt
½ teaspoon chopped fresh or 1/8 teaspoon dried dill
1 tsp minced garlic
Blend well.
