• Mediterranean Shrimp and Pasta

Ingredients:

4 cups whole wheat penne pasta, cooked al dente
1 tbsp. plus 1 tsp. extra virgin olive oil
½ large onion, sliced thin
1 clove of garlic, minced
½ cup sun dried tomatoes, sliced
3 handfuls fresh baby spinach
½ cup fresh basil, chopped
2 tbsp. dry vermouth
½ tsp. kosher salt
1/8 tsp. freshly ground black pepper
¼ cup toasted pine nuts
1/3 cup freshly grated Parmesan cheese
2 pounds fresh shrimp peeled and de-veined

§ Sautee onion and garlic until soft in 1 T. olive oil.
§ Add sun dried tomatoes, spinach, basil, salt, pepper and vermouth. Sautee until spinach is wilted and tomatoes are soft.
§ Add shrimp and cook for 2 minutes.
§ Mix in pasta and remaining 1 t. olive oil. Sautee for 2 minutes
§ Stir in pine nuts and mix well.
§ Just before serving add Parmesan cheese and toss.
