1 tbsp. olive oil
4oz. Medium shrimp, peeled
1/3 cup sliced mushrooms
1/3 cup sliced green bell peppers
1/3 cup sliced red bell peppers
1/3 cup sliced water chestnuts
1 tbsp minced garlic
Pepper to taste
Low-sodium soy sauce to taste
Directions
Heat oil in large skillet; add shrimp and cook while stirring for about 3 minutes; set aside. Stir-fry mushrooms, green and red peppers, water chestnuts, and garlic to desired tenderness. Add shrimp to vegetables. Season with pepper and soy sauce.
