• Black Beans over Brown Rice

• Seared Tuna over wilted spinach

• Mediterranean Shrimp and Pasta

Ingredients:

4 whole wheat tortillas
1 pound lean flank steak, cut on a bias, ¼" thick
1 medium onion, sliced thin
1 green pepper, sliced thin
1 tomato, diced
½ cup black beans
½ cup brown rice
¼ cup guacamole
¼ cup shredded cheddar cheese

Heat tbsp olive oil in skillet until hot.

Add flank steak and cook for 3 minutes or until seared.

Add bell pepper and onions and cook for 1 minute or until vegetables are slightly soft.

Layer as follows on wheat tortillas:

Brown rice, tomatoes, black beans, guacamole, cheese, then steak and vegetables.

Fold from bottom to top.

Note: Grilled shrimp or chicken may be used in place of steak.
