Soy Glazed Salmon

Ingredients:

2 cups low sodium soy sauce
½ cup pineapple juice
1 tbsp crushed red pepper flakes
1 tbsp chopped fresh ginger
½ tbsp chopped garlic
1 tbsp chopped green onion
2 tbsp cornstarch
2 tbsp water
4 salmon filets (4-6 ounces each)

Mix soy sauce, pineapple juice, red pepper, ginger, garlic, and green onion. Bring to a boil. Slowly stir in cornstarch and water.

Place salmon filets in a shallow dish and cover with sauce. Allow to marinate for 30 minutes. Cover a baking sheet with foil. Place fish on foil and top with any remaining marinade. Broil 5 to 7 minutes.

Yield 4 servings.

Although salmon has 7-10 g fat per filet, keep in mind that it is primarily heart-healthy omega 3 fatty acids. Try serving with grilled veggies or a side of beans to round out your meal.
