Bill Capo speaks to Chef Marcelle Bienvenu, who has two recipes for the ninth installment of this year's 12 for the Road:
Cranberry Mocktail
• 1 part Cranberry Juice
• 1 part Spiced Apple Cider
• 2 parts chilled Sparkling Apple Cider
• Frosted cranberries for garnish
Pour the cranberry juice into a champagne flute. Add the apple cider and the sparkling cider to fill the glass. Garnish with the cranberries and serve immediately.
Frosted Cranberries
• 2 tbsp water
• 1 tbsp pasteurized egg white or liquid egg substitute
• 1 (12 oz) package of fresh cranberries, rinsed and patted dry
• 1 cup white granulated sugar
Stir together the water and egg white to blend in a medium-size mixing bowl. Coat the cranberries with this mixture. Spread the sugar out on a baking sheet and roll the cranberries in it until they are well coated. Dry at room temperature for 2 hours or store them in the freezer for about 1 hour before use.
