I was thinking about a great dish for the WWL challenge. I wandered around the market, and the salmon was calling me. But what would go with the salmon? The mushrooms looked really good, too, so the risotto wasn't much of a leap. But how to make it interesting?
Spice it up with a little chipotle pepper, and top it with crispy salmon skin. But it was still missing a little touch, so the fried poached egg came in for the ultimate finish. Fantastic Dish! Saintsational!
