Recipe: 5-Ingredient Potato Soup, Smoked Sausage with Peppers & Potatoes

5-Ingredient Potato Soup

Ingredients

8 bacon strips, sliced thin

6 medium all-purpose potatoes, peeled and cut into chunks

8 cups chicken stock

1/2 cup half and half

1/2 cup cheddar cheese, shredded

Salt, and pepper to taste

2 Tbsp. chopped fresh parsley or chives

Directions

In a large soup pot, sauté bacon until crisp, remove from pot, draining on paper towels.

Add potatoes and optional vegetables cooking for 5 minutes.

Pour in the stock. Bring to a boil over high heat, lower the heat, cover the pan partially and simmer for 45 minutes or until the potatoes are tender.

Puree the soup in a blender or use a hand blender.

Return the pureed soup to the pan and add the cream. Return to low heat, simmer for 5 minutes, and stir in cheese. Season with salt, and pepper.

Serve garnished with parsley or chives.

Note: optional vegetables: 2 carrots, frozen peas, small bunch of spinach, 1 cup cut up broccoli

Smoked Sausage with Peppers & Potatoes

Ingredients

2–3 Tbsp. olive oil

1 medium onion, thinly sliced

1 3/4 lbs. baby red or gold potatoes, quartered or diced into 1/2 inch cubes

1 lb. smoked sausage, sliced

2 bell peppers (1 red & 1 green)

1/2 cup green onions

salt & fresh cracked pepper, to taste

Directions:

In a large pan, heat oil over medium. Add onions, potatoes and sausage uncovered for 20–30 minutes, stirring occasionally. Will be ready when potatoes are just fork tender. Add bell peppers, and green onions cooking another 5 – 6 minutes, stirring occasionally just until al dente. Remove from heat, at this point if your potatoes aren’t quite tender, cover with the lid and let steam a bit. Season with salt & pepper.

Can be served over rice.
